Amber grade maple syrup is the mid-season harvest. Light transmittance is 50-74.9%, which before the 2014 regrading, would have been called Medium Amber. The flavor is delightfully complex and nuanced. Characteristic flavor notes are maple, caramel, vanilla, smoke, fresh cream or farm butter. It can evoke marshmallow or creme brûlée. Especially good batches can have hints of nutmeg, honey, or fruit.

The flavor is not as complex and nuanced as amber. It is more intense. Characteristic flavor notes are maple, caramel, butterscotch, and dark brown sugar to molasses or toffee.
