Amber grade maple syrup is the mid-season harvest. Light transmittance is 50-74.9%, which before the 2014 regrading, would have been called Medium Amber. The flavor is delightfully complex and nuanced. Characteristic flavor notes are maple, caramel, vanilla, smoke, fresh cream or farm butter. It can evoke marshmallow or creme brûlée. Especially good batches can have hints of nutmeg, honey, or fruit.
