Very dark maple syrup, 1/2 US gallon

Very dark grade maple syrup is rare, made in the last days of the season. Light transmittance is 0-24.9%, which before the 2014 regrading, would have been called Grade C. It is best served at the table in a glass vessel to show off its rich, dark ruby color. The flavor is very intense. Characteristic flavor notes are maple, toffee, dark brown sugar, and molasses.
